Hey ya'll! A lot of you know that I have an OBSESSION with rainbows :) They are just so freaking amazing!! I'm fascinated by color and the way it stimulates our visual sense; color brightens everything.
Nature brings vibrancy and color to our life! Fruits and veggies come in all different rainbow hues; what an amazing gift from our lovely God! It's fun eating beautifully arranged plant-based cuisines. I used to have at least one rainbow salad a week, and somehow I stopped making them. So I'd thought I'd change that and start by sharing one with you all this week. We all know salads are so very nutritious, but why not make it #artfullydelicious ;) Have fun in the kitchen and chop up colorful veggies in all sorts of ways. Then, eat it with this scrumptious lemon-tahini dressing! Recipe below.
Salads are the easiest things to prepare! Put some music on, get to chopping and always arrange food by color. If it isn't arranged by hue, then I get a little thrown off and it drives me a little crazy. Only a little tiny bit though! lol!
veggies I used:
Red: red pepper, red beets, cherry tomatoes
Yellow: yellow beets
Green: kale, lettuce and avo
Blue: no blue, just the plate! lol!
Purple: purple cabbage, aka red cabbage
Once all veggies are chopped up, arrange on a plate and make the dressing.
4 tbs of tahini
zest of 1/2 lemon
juice of 1/2 lemon
1 tsp of miso
1 tsp of grated ginger
1/4 tsp of garlic powder
1-2 tsp of maple syrup
5-8 tbs of water (or more if you like it less thick)
Mix all ingredients until well incorporated.
