Kale salad that tastes like dessert!

Hi ya'll!! Welcome back :) Hope you guys had a lovely thanksgiving! So let's be honest ...who loves kale? and who cannot stand it? Well..if you don't like it, try this salad and you will not be disappointed. If you are crazy about sweets, you will LOVE this salad! The ingredients are all amazing by themselves (sweet potato, gala apple, pomegranate seeds, and pecans), but together with a creamy and delicious dressing, whew! your tastebuds will love ya! First are the ingredients to the salad, then the recipe for the most delicious tahini dressing :) Let's jump right into it!


Sweet and Crunchy Kale Salad

This salad serve 2 (if serving as side salads) or 1, if you make it a meal ;)


5-6 kale leaves, de-stemed and torn into pieces

1 Gala apple, cubed (any apple will do)

1 large sweet potato, cubed

1/2 c of pomegranate seeds

1/3 c of pecans


1. Bake cubed sweet potatoes at 400 degrees for 25-30 minutes. You can place baking paper on a baking sheet, and the potatoes will not stick. No need for oil :)

2. While it bakes, de-stem the kale and tear into small bite-sized pieces. Massage the kale, so it isn't so hard. Massage it for about 1 minute. Get them hands in there and give it a little love! lol!

3. Chop the apple into bite-sized cubes. Use the juice of 1/2 an orange to keep your apples from browning. The other 1/2 of the orange you'll use for the dressing.

4. Remove seeds from a pomegranate, use as much as you want from it. (Taking the seeds out is one of my favorite things to do!! have fun with it :)

5. Make the dressing below:


Ginger-orange Tahini Dressing


3 heaping tbsp of tahini (don't be shy, really dig in that jar and use VERY generous tablespoon portions)

juice of 1/2 an orange

zest of 1/2 an orange

1/4 tsp of ginger powder (or fresh)

dash of pink Himalayan salt

1/2 tsp of garlic powder (optional)

1 tbsp of maple syrup

1/3 c of water (more or less)


Mix all ingredients with a spoon until well incorporated. Eventually, all the ingredients will become one. Use more or less of the water indicated, depending on how creamy or thin you like it.
