This bowl of goodness tastes like blueberry pie with a blast of coconut! So yummy and decadent, your belly will be filled for the whole morning. Oatmeal is such a versatile breakfast food! You can pretty much flavor it how ever you like and top it with any of your favorite flavors.
Let's jump right into the recipe.
Blueberry coconut oatmeal bowl
1 cup of old fashioned oats
1 can of coconut milk
1/2 c blueberries
pomegranate seeds, raspberries,
blueberries, coconut flakes,
coconut sugar, apple slices
tip: add walnuts if you have some!
I ran out, but last time I made it, the walnuts gave it an extra touch!
1. Place oatmeal, milk, and blueberries in a small pot and heat over medium-high.
2. Once it bubbles, turn down to low and cook for another 5-7 minutes or so. Once cooked to your liking, crush the blueberries. All this purple glory will come out and your oatmeal will look royal ;)
3. Top with fruits and coconut sugar and enjoy!
