This is the easiest recipe you will ever come across for pancakes :) It's been all over Instagram for a long long time, and it is my go-to pancake recipe with just a few ingredients. It is gluten-free, dairy-free, and refined sugar free! Can it get any better? Yes, because it has the most delicious fall fruit to top it off!! PERSIMMONS! Have you guys ever tried this fruit?! It's THE BOMB! For real. But of course you can top them off with any fruit you desire ;) Scroll down for the recipe.

Pumpkin-Pie Spice Pancakes
1.5 c of oats
1 cup of unsweetened almond milk
1 ripe banana
1 tsp of pumpkin-pie spice
1. Grind oats into a flour consistency (I used a Nutri-bullet)
2. Mix in mashed banana, almond milk, and spice, until well combined.
3. Heat up a skillet and place a tiny bit of coconut oil. Wait until it is hot to pour batter. Flip the pancakes when golden. Half way through, you may want to add some more milk to your batter, as it will thicken.
4. Top with any fruit, but I suggest persimmons! Pour coconut nectar, or any sweetener of choice.
Serves 1-2 depending on how much ya like to eat ;)
