Cha-Cha-Cha Chia!

Remember chia pets?! Who would have thought that those tiny little seeds would one day become popular in the health food scene! What is it about these cute little seeds that make them a great addition to your diet? Well...chia seeds are incredibly nutritious for many reasons.

Interestingly, the Mayans, Aztecs and Incas used chia seeds for energy and endurance. It was known as their "running food". Prior to an athletic event, they consumed chia seed gel to maintain their stamina and energy. Below are four reasons why this tiny but powerful seed is so healthy for us:

  1. Antioxidants - we all know antioxidants are excellent for our bodies! Antioxidants help our body get rid of free radicals that could potentially cause diseases.

  2. Protein - 2 tbs of chia seeds = 4 grams of protein, which includes all eight essential amino acids :)

  3. Omega 3 - You can protect your heart by consuming about 1-2 tablespoons of chia seeds. This provides you with 100% of your daily requirement for omega-3. Omega-3 helps raise HDL cholesterol (the "good" cholesterol), thus lowering the risk of cardiovascular disease.

  4. Fiber - Excellent source of fiber to support your digestion.

These tiny black seeds can easily be incorporated in your diet. It is tasteless and can transform into a cool gelatinous substance that can be used in many recipes. Below is a recipe for chia pudding! You can eat it for breakfast, dessert, or a healthy snack.

Fruity Chia Seed Pudding

1 1/2 cups of almond milk

3 tbs of chia seeds

2 1/2 tbs of maple syrup

1 tsp of blue spirulina (optional)

1 cup of blueberries

1 cup of strawberries

tiny piece of beet (trust me)

1/2 c more of almond milk for fruity toppings

Blue layer: In a bowl mix almond milk, chia seeds and sweetner until well combined. Refrigerate over night. This allows the seeds to become gelatinous. The next day add blue spirulina if you'd like.

Purple layer: Blend blueberries and splash of almond milk.

Hot pink layer: Blend strawberries, beet, and splash of almond milk.

Serves 2

Layer in a glass container. I topped it with pitaya hearts just for an extra touch!

You can use any fruit, really. Be creative and see what colors become!!

much love and peace,
