Well..if you don't like it, try this salad and you will not be disappointed. If you are crazy about sweets, you will LOVE this salad! The ingredients are all amazing by themselves (sweet potato, gala apple, pomegranate seeds, and pecans), but together with a creamy and delicious dressing, whew! your tastebuds will love ya! Hi! Today's topic is one very dear to my heart! I got to visit Poplar Spring Farm Sanctuary located in Maryland. The farm is gorgeous and many rescued animals live there. This beautiful peacock shown above is just one of the amazing beings that reside there! Every year they have an event called "Thanksgiving with the turkeys". It is a huge vegan potluck, where anyone is welcome. Everyone brings a vegan dish and it is such a great time seeing and meeting all the animals. The turkeys, roosters, and hens, gather and are given a meal to enjoy. It's a good time! So next year, I'd love for you to join, ok?! :)
I believe everyone's diet is a personal decision and even if one eats meat, I totally respect it. I just want to share my experience with you, and maybe I can spark some interest in pursuing a vegan lifestyle by what motivated me to become vegan and why it is so important! I'll share some information at the end on why it makes so much sense to adopt this aw...
This bowl of goodness tastes like blueberry pie with a blast of coconut! So yummy and decadent, your belly will be filled for the whole morning. Oatmeal is such a versatile breakfast food! You can pretty much flavor it how ever you like and top it with any of your favorite flavors.
Let's jump right into the recipe.
1 cup of old fashioned oats
1 can of coconut milk
1/2 c blueberries
pomegranate seeds, raspberries,
blueberries, coconut flakes,
coconut sugar, apple slices
tip: add walnuts if you have some!
I ran out, but last time I made it, the walnuts gave it an extra touch!
1. Place oatmeal, milk, and blueberries in a small pot and heat over medium-high.
2. Once it bubbles, turn down to low and cook for another 5-7 minutes or so. Once cooked to your liking, crush the blueberries. All this purple glory will come out and your oatmeal will look royal ;)
It finally feels like fall here in VA! The trees are gorgeous with all the beautiful foliage views. Breathtaking. Simply breathtaking! Ya'll know I like color, so in honor of autumn, I'll be sharing with you some juicy recipes with an ombre of beautiful fall colors :)
Let's start with one of my favorite juices!! A magenta-red fusion of sweetness ;)
-2 large beets
-2 Bosc pears
-thumb of ginger
place all ingredients in a juicer and that's it!
tip: sprinkle in some cinnamon and oh my goodness, your tastebuds will love ya even more! ;)
Get ready to taste some serious sweetness. It blows my mind every time I make this juice, lol!
Tumeric Carrot Juice
Next, let's drink something orange-y. With no oranges, lol! It's potently nutritious with just 2 ingredients.

-thumb of tumeric
place ingredients in a juicer and that's it!
Get that beta-carotene and curcumin :) and enjoy that antioxidant benefit!
