How about treating yourself to delicious guilt-free pancakes?! You gotta! This is the easiest recipe you will ever come across for pancakes :) It's been all over Instagram for a long long time, and it is my go-to pancake recipe with just a few ingredients. It is gluten-free, dairy-free, and refined sugar free! Can it get any better? Yes, because it has the most delicious fall fruit to top it off!! PERSIMMONS! Have you guys ever tried this fruit?! Pumpkin-Pie Spice Pancakes


1.5 c of oats    

1 cup of unsweetened almond milk

1 ripe banana

1 tsp of pumpkin-pie spice

Remember chia pets?! Who would have thought that those tiny little seeds would one day become popular in the health food scene! What is it about these cute little seeds that make them a great addition to your diet? Well...chia seeds are incredibly nutritious for many reasons.

Interestingly, the Mayans, Aztecs and Incas used chia seeds for energy and endurance. It was known as their "running food". Prior to an athletic event, they consumed chia seed gel to maintain their stamina and energy.  Below are four reasons why this tiny but powerful seed is so healthy for us:

Hola! and welcome back!! It's the last post of this rainboseries. Hope you guys have been enjoying it! We've been discussing the importance of eating the rainbow as it pertains to our health. Phytonutrients are the reason! They are nutrients only found in plants. Eating a variety of plant-based foods assures you that you are obtaining a variety of antioxidants and nutrients for optimal health.

Today, we'll be learning about purple foods!!!! I'm amazed how food can be purple. Truly. It is a gorgeous color! Let's dig in.

Hello! Welcome back to this rainbow food series! For the past few weeks we've been learning about the importance of eating a variety of colorful plant-based foods and delved into what nutrients are found in each colored food group. We've learned about red, orange, yellow and green foods. Now we move onto blue!! Blue is such a fascinating color! Green is life?! Wouldn't you agree?! When I see spring coming and everything turns green, I get so giddy because life seems vibrant with all of what nature has to offer us. The wonderful thing is that green is all around us, especially in food!

Let's begin!

Our gorgeous animal friends like elephants, deer, rhinos, cows, horses, etc, all are herbivorous. Let's get something straight...meat does not equate to strength, size or muscle. On the contrary, a plant-based diet gives us more strength and power, as nutrients (like protein) are being eaten right from the source :) However, it's not just eating any vegan food to obtain the wondrous benefits of a plant-based diet. One must eat a variety of colored foods that are whole, unprocessed, and fresh, if possible. Greens are an essential part of a plant-based healthy diet.

Hello! and welcome back :) We continue this rainbow food series with the color YELLOW! We have been learning why it is so important to eat an array of rainbow plant-based foods. To summarize from the last post, plant foods contain phytonutrients, which are plant-specific compounds that give us amazing health benefits. These powerful plant nutrients can act as antioxidants, which protect our bodies from diseases. Different colored foods have different nutrients. Thus eating an assortment of rainbow food will allow you to take advantage of a variety of nutrients.
